No Wrap Ribs - Last time cooked at 225. Starting off with two racks of pork loin ribs tonight (kind of a meatier baby back). I don't wrap ribs, don't wrap pork butt and rarely wrap brisket (when i do it is butcher paper) i also don't do sauce, i will add a glaze to my ribs near the end, but no sauces. The only time i wrap now is when i give em a rubdown the night before. No wrap, just straight through cook at 225 for 4 hours. Only time most folks wrap is if the bark is starting to get burnt.
Well fantasy football draft day is this weekend. When i wrap i use a disposable aluminum pan. After 1 hour i took them out of the foil and let them both cook for another 1.5 hours with no spritzing. I want to taste the pork. Sprayed every 30 minutes which i think was the problem cooling them off.
